Watermelon, Strawberry & Feta Salad
A take on the Mediterranean combination of watermelon, strawberries and feta, this refreshing and easy zinger of a salad couldn’t be more perfect. Unassumingly simple, the sweet melon and berries, salty cheese and refreshing mint reach their peak when doused with white balsamic vinegar and dribbled with fruity olive oil. One serving of this salad provides close to 100% of your daily vitamin C needs while feta cheese provides a good source of protein and calcium.

Ingredients
- 2 pounds (4 cups) seedless watermelon (without rinds), cubed into one inch squares
- 2 cups fresh strawberries, sliced
- 2 tablespoons white or red balsamic vinegar
- ½ teaspoon salt
- 6 ounces Greek feta, cubed or crumbled
- 3 tablespoons extra-virgin olive oil
- Freshly ground black pepper
- 8-9 mint sprigs, chopped (can use Basil instead)
Cooking Instructions
1. In a large bowl, toss the watermelon and strawberries and douse with the vinegar. Season with salt.
2. Toss the feta and mint lightly with the fruit and drizzle over the olive oil. Season with pepper.
3. Serve immediately.
