Turkey Apple Brie Sandwich
It’s easy to opt for fried foods from the deli but homemade sandwiches can be healthier, tastier, and more economical. This sandwich combines savory turkey, crisp, tart apple slices and creamy brie swaddled in a whole wheat or sourdough baguette. Turkey is a rich in protein and an excellent source of vitamins and minerals, especially B vitamins. Apples are loaded with vitamins A & C as well as a powerful antioxidant, quercetin, that may aid in heart and eye health. Brie is a soft cheese that is high in saturated fat but also offers vitamin B12 and calcium. It’s best enjoyed occasionally. Whole wheat bread is far more nutritious than white bread, offering fiber and nutrients. It also doesn't spike your blood sugar as much due to its fiber so it's a better anti-diabetic choice.

Ingredients
· 1 Granny Smith or any other crisp apple, thinly sliced
· 1 teaspoon lemon juice
· 1 whole-wheat or sourdough baguette (8 ounces)
· 4 leaves red leaf lettuce
· 4 ounces sliced oven roasted turkey (1 cup) (see Tip)
· 2 ounces Brie cheese, thinly sliced
· 4 teaspoons Dijon mustard
Cooking Instructions
1. Toss apple slices and lemon juice in a small bowl. Cut baguette crosswise into 4sections. Cut each section in half lengthwise. Remove the soft inner portion of bread, leaving a 1/4-inch-thick shell. (Reserve the inner bread for another use.)
2. Top the bottom pieces of bread with lettuce, turkey, Brie and the apple slices.Spread mustard on the top pieces and set one on each sandwich. Serve immediately or wrap and refrigerate for up to 4 hours.
