Hot Honey Apple & Cucumber Salad
This refreshing salad is high in fiber and nutrients and easy to throw together. It bursts with flavor, from the sweet tartness of the apples and hot honey to the tangy salty goat cheese. It’s a pretty salad as well, making it a fun party side dish. Apples are rich in antioxidants, particularly quercetin, that helps reduce your risk for chronic disease. Ingredients
· 2 crisp apples, preferably Envy or Fuji
· 3 English cucumbers, sliced
· ½ cup jicama, peeled and diced
· 3 shallots, sliced
· ¼ cup crumbled goat cheese
· 2 tablespoons hot honey
· 1 lime
· Salt and pepper to taste
· Parsley, optional
Cooking Instructions
1. Slice apples into thick wedges. Add cucumbers, jicama and shallots and toss together.
2. Sprinkle goat cheese and gently mix with salad.
3. Drizzle hot honey and a squeeze of lime on top. Add salt and pepper to taste and garnish with parsley.
