Baked Catfish Nuggets
This recipe takes your traditional Southern comfort food cornmeal catfish and gives it a healthy twist by baking it in the oven. This method is quicker and so much less messy. This dish is gluten and dairy free and can be made in 30 minutes, making it perfect for a weeknight meal. In addition to being low in calories, catfish is packed with protein, healthy fat, vitamin B12, and vitamin D. Vitamin B12 has been found to protect against heart disease and anemia, support mental health and energy levels. It’s also a very tender fish that works well whether fried, baked, or grilled.

Ingredients
· 1 pound catfish nuggets
· ½ cup cornmeal
· 1 tablespoon Cajun seasoning
· 1 teaspoon garlic powder
· ½ teaspoon salt
Cooking Instructions
1. In a shallow dish, mix together cornmeal, Cajun seasoning, garlic powder, and salt.
2. Place a catfish nugget in the cornmeal dish. Coat completely. Remove to a lined baking sheet. Repeat for remaining fish.
3. Bake at 400 degrees for 17-20 minutes, until fish is cooked through, golden, and flaky.
